Pots de Creme

According to the Pioneer Woman, first of all, here’s how you do NOT pronounce Pots de Creme: “Pawts deh Creem.”

Here’s how you DO pronounce Pots de Creme: “Po de Krehm”, or, if you want to get really technical, “Po de k(insert phlegmy, back-of-the-throat crackly French sound)ehm”.

Short of sticking a spoon in a pint of Haagen Dazs and throwing it at her dinner guests, this is definitely the easiest dessert in her arsenal. Now, it does need to chill for 3 to 4 hours before serving, so it does require a tiny bit of planning. But the preparation couldn’t be easier, 5 minutes, tops - and oh so good!

We got creative with our Pots de Creme and used mint chocolate chips, which was good - but keep in mind that there is coffee in the recipe, so if using something like butterscotch chips you might want to substitute hot milk.

Fettuccine with Asparagus, Ramps, Morels and Tarragon

Dinner is so much better when you get to forage for your ingredients. We are lucky enough to have the elusive Morels nearby and an asparagus patch in the garden. Paired with some freshly dug ramps from the in-laws and some "nice" tarragon, we were all set! We thoroughly enjoyed our Fettuccine with asparagus, ramps, morels and tarragon.

Ramp & Sausage Risotto

We made this delish ramp & sausage risotto tonight for dinner.

These are Ramps, which I had never even heard of. They are sort of like green onions but have a faint smell of garlic. Jeni's father-in-law has property in Luck, Wisconsin and has a ton of these things growing there. He gave Jeni 2 grocery bags full so, we needed to use them. Jeni had made this recipe last year so we decided to try it again. It was fantastic! A definite keeper!

We did have to substitute a few ingredients. We used white cooking wine instead of vermouth and romano instead of parmesan cheese. We drank the REAL white wine! Fantastico!
