We made this delish ramp & sausage risotto tonight for dinner.
These are Ramps, which I had never even heard of. They are sort of like green onions but have a faint smell of garlic. Jeni's father-in-law has property in Luck, Wisconsin and has a ton of these things growing there. He gave Jeni 2 grocery bags full so, we needed to use them. Jeni had made this recipe last year so we decided to try it again. It was fantastic! A definite keeper!
We did have to substitute a few ingredients. We used white cooking wine instead of vermouth and romano instead of parmesan cheese. We drank the REAL white wine! Fantastico!
